The dish Arista di Maiale al Forno is composed of slices from a loin of pork that has been roasted in the oven, usually sauced with the pan drippings, as you see in the picture. This is a typical dish of Tuscany, sometimes called Arista di maiale alla fiorentina. In fact, the name “arista” is said to have come from an outburst from a Greek cardinal who, having been served the dish in Florence, exclaimed, “Aristos!” meaning “the best!”
The seasonings are also typically Tuscan: rosemary, garlic, black pepper, and sage. In the picture the arista is served with potatoes cooked alongside the roast and a vegetable flan, Sformato di verdure.
