Sure, everybody knows that the base for pizza is tomato sauce. But it really isn’t. Most pizzerie have a list of “white pizzas” after the “normal” pizzas. This is one of my favorites, sausage and friarielli, a bitter green. At the base there is a soft cheese, sometimes mozzarella and sometimes another kind of soft, spreadable cheese and sometimes nothing at all.
The simplest form of pizza bianca is dressed simply with olive oil, rosemary, and salt. Sometimes a generous pizzeria will make these, cut them up, and present them as something to nibble on while you wait.
