The toppings on Pizza Capricciosa are nominally tomato, mozzarella, ham, olives, mushrooms, artichokes, extra virgin olive oil. But Capricciosa means capricious, so there’s a lot of leeway depending upon the person who’s tossing the pie.
The one in the picture substitutes prosciutto crudo for the baked ham and adds quail eggs—rather large ones that are suspiciously like pullet eggs. The picture was taken on the Via Veneto in Rome, so the high end prices tend to allow for some pricier ingredients.
Pizza Capricciosa is a pizza you can rely upon to be quirky and fun, and an excellent choice if you can’t decide upon a pizza in a pizzeria.
