Finocchio al Forno
An interesting side dish you don't see in the US

Finocchio al Forno is simply fennel cooked in the oven, or roast fennel. Fennel is quite common in Europe, and usually available in stores.

Finocchio can also be an element of a salad, eaten raw. It may come with a group of raw vegetables and an herbed oil dipping sauce in a dish called pinzimonio, often served as an appetizer dish.
