Calamari ripieni , stuffed squid

Calamari ripieni are stuffed squid. They could be braised (brasato) or cooked in the oven (al forno). The squid are cleaned, the tentacles chopped with parsley, capers, eggs, breadcrumb, onion, and garlic and braised in white wine with tomatoes or baked with a tomato sauce. The Mediterranean totani can also be used in place of calamari. If the calamari are frozen before cooking, it will be stated on the menu. There are many regional variations on the dish.
