The Sardinian word for ring is “lorigi”, so this interesting chain link pasta is called lorighittas and it’s served here with shrimp, gamberi, and tomatoes, garlic and olive oil.
It’s obviously a difficult pasta to make in the home. My Sardinian contact Paola Loi tells me, “Originally the lorighittas were made on All Saints’ Day and the originally recipe was to serve them with a thick tomato sauce and chicken wings or legs. Nowadays they can be cooked with zucchini and shrimps, or artichokes and so on.”
The pasta holds the sauce very well, and if you’re lucky enough to see it on a Sardinian menu, try it.
