A modern classic, ravioli with Gorgonzola cheese and pears is showing up on menus all over Italy. The combination of cheese and pear is used in other places, working well as a pizza topping or in a something like a farro salad. While I’m generally not a fan of fruit in my savory dishes, this one works well for me.
Keep in mind that there are variations of the dish might surprise you. If you order “ravioli con gorgonzola e pere” you will probably get a fairly neutral filling in your ravioli with a sauce made of melted Gorgonzola and thin slices of sauteed pears as you see in the rather dreamy picture above (the dish is both strong and sensual). On the other hand, Ravioli ripieni di pere e Gorgonzola means that the ravioli has been stuffed with the pear and Gorgonzola combo and will be sauced simply; with butter, parmigiano, and walnuts perhaps, or the classic butter and sage.
