Sciuè Sciuè

Sciuè Sciuè means “hurry, hurry” in Neapolitan. Like the word “ciao” it can have other meanings as well. It might mean “okay,” “simply,” “quickly,” or “no problem.” This is one of those dishes you might have to ask about, as it depends upon what’s fresh and what’s in the kitchen that day. As the name implies, it’s a quick dish to cook and a delicious one in the right hands.

The base of the sauce is fresh tomatoes and a little tomato puree or crushed tomato, chili flakes, mozzarella cut into cubes, and pasta or gnocchi. Sometimes there will be toasted bread crumbs or onions in the sauce.
