Saltimbocca alla Romana is one of those classic Roman Osteria dishes with a quick preparation that will wow you. Saltimbocca means “jumps in the mouth” and it does. The base is a thinly pounded slice of veal. A couple of sage leaves and a slice of prosciutto covers the veal and is stitched together with toothpicks so that both sides can be sauteed in a minute, then finished with wine. In a classy restaurant they will remove the toothpicks, in a trattoria maybe not.
The picture depicts the Saltimbocca alla Romana from a restaurant called dar sol Olimpio in Rome. It is my favorite so far. Then again I haven’t tasted them all. I will try.
