Uova con tartufo | Fried Egg with White Truffles

There are few combinations more perfect than a fried egg covered with truffle shavings: Uova con Tartufo. It’s also one of Italy’s most versatile dishes. Tartufi (the plural of tartufo, truffle) when in season are found in many simple preparations like the primo piatto fettuccine al tartufo or the main course tagliata con tartufi.
