Culurgionis or Culurgionis d’Ogliastra are a pasta filled with potatoes, olive oil and mint found in specific areas in Sarinia (like Ogliastra). The way the round of pasta is filled makes it unique. As you can see in the picture, the pasta appears like an oriental dumpling more than a raviolo. While the process is difficult for most folks, a trained hand makes the stuffing seem easy.
