Tordelli lucchesi are a rather large ravioli stuffed with meat in a meat sauce as they make it in Lucca. It’s a meaty dish as you might imagine. It derives from the old cucina povera days when the only meat you had was for your big Sunday meal with family. If you were very lucky, you took the meat and the pan drippings, added local pecorino cheese, some bread crumbs soaked in milk, eggs and maybe a bit of foraged thyme.
And what about the size? They were traditionally cut with the rim of a drinking glass.
